This traditional soup, prepared during the Tepreş Festivals celebrated by Crimean Tatars after Hıdırellez, is made with the following ingredients:
1 kg lamb with bone, 1 medium onion, 2 tablespoons of butter, salt to taste, 6–7 spring onions, and 6–7 fresh mint leaves. For the thickening mixture, use 1 bowl of yogurt and 3 tablespoons of flour.
Boil the lamb and onion in enough water to cover them, add salt, and let it cool slightly. Remove the boiled onion from the pot.
In a separate deep pot, sauté the flour in butter until lightly golden. Add the lamb broth gradually, stirring with a whisk until the mixture reaches a thick, boza-like consistency.
In another bowl, add 3–5 spoons of the hot soup to the yogurt to temper it. Then slowly pour the tempered yogurt into the boiling soup, stirring constantly with a wooden spoon to prevent curdling.
Finally, add finely chopped spring onions and mint. Let the soup simmer for a few more minutes and then remove from heat.
