Bone-in meat is sautéed with onion in a pot. Tomato paste, lentils, and red pepper flakes are then added and sautéed for a while longer. The mixture is stirred thoroughly, water is added, and the dish is cooked over low heat. The keşkek is cooked to a consistency slightly looser than pilaf and thicker than soup.
