Tomatoes, red capia peppers, onions, yeast, yogurt, and mint are mixed together in a large basin. Flour is then gradually added and the mixture is kneaded. The kneaded dough is covered and left to rest to allow it to ferment and rise. Once fermented, the mixture is spread in small portions onto a clean cloth and left to dry in the sun. Within a few days, the dried tarhana is crumbled by hand. It is then sifted to obtain a flour-like consistency and stored in cloth bags. Tarhana soup, believed to be a source of healing, is said to be beneficial for colds when prepared with plenty of vinegar and spices.
