Winter Tandoor Börek from Akyurt

Akyurt Tandır Böreği is a traditional pastry prepared from a leavened dough rolled out by hand into thin sheets, filled with either minced meat or potato stuffing, and shaped in the form of a mussel. It is baked in stone ovens heated with wood fire or in electric ovens at 200 °C. This local specialty is traditionally prepared for special occasions such as weddings, engagements, promise ceremonies, and for pre-dawn meals (sahur) during the month of Ramadan. For the dough, fresh yeast is mixed with half a glass of water in a bowl. Flour and salt are added, and additional water is incorporated gradually while kneading until a soft, elastic consistency is achieved. The dough is then left to ferment for approximately one hour. To prepare the minced meat filling, vegetable oil or butter is melted in a pot, finely diced onions are sautéed, and salt and spices are added according to taste. For the potato filling, boiled potatoes are grated and mashed, then combined with sautéed onions, salt, and spices as desired. Once fermented, the dough is divided into approximately eleven portions, each about the size of a fist. Each portion is rolled out into a thin yufka on a pastry board. A mixture of melted butter and vegetable oil is brushed over the rolled dough. Two-thirds of the circular yufka is folded over itself, brushed again with oil, and then rolled into a log shape starting from the folded side. The same process is applied to all pieces. The rolled dough logs are set aside, covered with a clean cloth, and allowed to rest so they can absorb the fat. Beginning with the first prepared roll, each log is placed on the pastry board and cut into pieces approximately two fingers wide. Each piece is held at both ends, pressed inward, twisted slightly, and flattened by hand. The flattened dough pieces are arranged on the board, filled with about one teaspoon of the prepared stuffing, and shaped into a mussel form. The filled pastries are placed on a baking tray and brushed with a mixture of whisked yogurt, sugar, and water; optionally, an egg yolk may be added to this mixture. After brushing, the börek is left to ferment for at least another ten minutes. Once risen, it is baked in a wood-fired stone oven or in an electric oven at 200 °C. Two to three minutes before removing the tray from the oven, butter or oil is brushed over the pastries. After baking, the golden-brown Akyurt Tandır Böreği is removed from the oven and placed on a clean cloth to rest.
