Cold Soup is prepared by soaking beans, chickpeas, and wheat overnight and boiling them separately. Strained yogurt is whisked until smooth, then gradually tempered with the hot cooking liquid of the wheat and added to the pot. The pre-cooked chickpeas and beans are incorporated, and the mixture is stirred continuously until it comes to a boil. Salt is added at the final stage, completing the cooking process. The soup is topped with dried mint sautéed in butter and served cold. Traditionally, this soup was frequently prepared in the region during the harvest season and kept cool by being buried underground to maintain its temperature.
