Preparation
A soft dough is prepared by kneading 1 kilogram of flour, 1 teaspoon of salt, and sufficient water, then left to rise. The filling is made from 7–8 onions, approximately half a kilogram of long green peppers and tomatoes, 1 tablespoon of tomato paste, 1 cup of vegetable oil, and 1 teaspoon of red pepper flakes. The onions, green peppers, and tomatoes are diced and sautéed in the oil; tomato paste, salt, and red pepper flakes are added and cooked for an additional five minutes.
Separately, the rested dough pieces are rolled out into large, thin rounds (similar to flatbreads). The filling is spread evenly over half of each round, which is then folded into a half-moon shape. The “yarımca” is cooked on both sides on a griddle or skillet. While still hot, it is brushed with oil. All dough pieces are cooked using the same method.
Soğanlı yarımca is also known as “içli yarımca.”
