Recipe
Homaça is one of the traditional wedding dishes prepared using the meat of animals slaughtered prior to weddings. Bone-in meat is cut into pieces, laid out on a clean cloth, and left to drain thoroughly. The pieces are then lightly pre-cooked one by one in a pan using their own fat. Once lightly browned, the meat is transferred to large cauldrons, where salt, thyme, and, optionally, tomato paste, hot pepper, and water are added, and the dish is left to cook. In the past, when the community gathered for prayers for rain, contributions were collected from everyone to purchase an animal for sacrifice. Homaça was prepared with the meat of the sacrificed animal and consumed collectively.
