Ekşili turp is prepared using black radish grown in Tatlak Village of the Çamlıdere district. First, the radish is peeled, grated, and its juice is squeezed out. It is then left to rest for a while to allow its bitterness to subside. Once the bitterness has been reduced, the radish is transferred to a tray. Thick plum sour sauce (erik ekşisi), prepared during the summer, is diluted with hot water and drizzled over the radish, making ekşili turp ready to serve. As a winter vegetable, radish is traditionally believed to be beneficial for ailments such as the common cold, asthma, and bronchitis, while erik ekşisi is thought to be effective in the management of diabetes. For this reason, ekşili turp is frequently prepared and consumed in the region as a means of strengthening the immune system.
