Bazlama Bread

Bazlama is a leavened bakery product traditionally associated with the Kızılcahamam district, produced and enjoyed by the local community for many years. Historically baked in households as a staple food, bazlama has today become a commercial product and an important source of livelihood for local tradespeople. The bazlama statue located at the entrance of the district welcomes visitors to Kızılcahamam. The most distinctive characteristic of Kızılcahamam bazlama is its ability to retain its soft and elastic texture for an extended period. It should be consumed within seven days from the date of production. The size of the bazlama is unique to the Kızılcahamam region: its diameter ranges between 25–28 cm, its thickness between 3–4 cm, and the net weight of the baked product is between 380–430 g. Traditionally prepared using Kızılcahamam water, Kızılcahamam bazlama contains no additives. For its production, flour is first sifted into a large kneading bowl, followed by the addition of yeast and salt. Kneading begins with the gradual addition of warm water. The dough should be soft enough to be shaped by hand, yet firm enough not to stick. If the dough is too firm, the bazlamas will not rise sufficiently. Once kneading is completed, the dough is left to rest in the kneading bowl for 1.5 hours at an ambient temperature of 20–22°C. After fermentation, 480 g portions are divided from the dough. These portions are shaped into rounds and placed in stacked wooden trays, where they are rested for an additional 15 minutes. Following this resting period, each dough piece is transferred onto a bazlama paddle and gently thinned by hand. The dough is then placed onto a metal griddle heated to 250°C. While on the griddle, it is further thinned with light fingertip movements in a circular form. Once bubbles form on the surface, the dough is turned over to cook the other side. Within approximately 15 minutes, both sides of the Kızılcahamam bazlama are fully baked
