Ankara Döner is prepared exclusively from the meat of lambs raised in the districts of Çubuk, Beypazarı, Kalecik, Polatlı, and Haymana, located within the borders of Ankara Province. These districts are renowned for sheep breeding due to their distinctive flora. The meat used is obtained from the Musculus longissimus dorsi (MLD) of male lambs that have reached physical maturity and have a live weight of 40 kg or more. No minced meat is added under any circumstances. Except for tail fat, no internal fats such as kidney fat, caul fat, or other visceral fats are used. Following the marination process, Ankara Döner is cooked slowly and exclusively over embers of oak charcoal, and the meat is sliced in thin, leaf-like layers. After slaughter, the meat must be rested for a period of 2 to 4 days at 4°C. The rested meat is then sliced to a thickness of approximately 1 mm using a sharp stainless-steel döner knife measuring 50–70 cm in length. For marination, salt is used at a ratio of 1.0%–1.5%. The marination mixture consists of either 1 kg of onion juice per 10 kg of meat or 1 kg of tomato purée per 10 kg of meat. Alternatively, a mixture of tomato purée and onion juice totaling 1 kg per 10 kg of meat may also be used. The marination process is carried out in a refrigerator at a temperature of 7–12°C for approximately 14–16 hours. At the end of this period, the meat slices are mounted onto the döner skewer and allowed to drain so that excess liquid is removed. To prevent the meat from drying during cooking, layers of fat are added to the skewer depending on the fat content of the meat, typically once every four to five layers. For every 15 kg of meat, 1 kg of thinly sliced tail fat is used. A cap of tail fat is also placed on the top of the döner stack to ensure tenderness of the outer surface. Tail fat additionally enhances the flavor of the meat. Cooking is carried out over embers obtained from oak charcoal that has been pre-burned. Slow cooking is essential, as it imparts the distinctive flavor characteristic of Ankara Döner. The use of oak charcoal is considered indispensable for achieving its authentic taste. The oak charcoal is ignited in a separate grill and, once reduced to embers, placed into the fire chamber of the döner oven. The döner meat is positioned approximately 20–25 cm away from the heat source and cooked at a temperature of approximately 200–220°C. During cooking, excess outer layers are first shaved with a sharp knife, and the döner is rotated to ensure even and gradual cooking. Ankara Döner is prepared for service by slicing the meat from top to bottom at a slight downward angle, producing thin, leaf-like slices.
