Recipe
For tarhana soup, tomato paste is sautéed with oil in a pot. The soup liquid is then added and brought to a boil for a short time. Powdered tarhana, previously diluted with a small amount of water, is added to the boiling liquid. The soup is stirred for a while to prevent lumping, the heat is reduced, and it is cooked until a thick consistency is achieved.
