Milk is brought to a boil in a pot. Once boiling, a generous amount of butter is added and melted, after which flour is incorporated and stirred continuously until a dough-like consistency is obtained. The fibrous dough is transferred to a pan and fried while being constantly stirred. After the höşmerim is browned, the surface is smoothed with a spoon, and additional butter is added intermittently to further brown the underside. The browned side is then placed facing upward on a serving tray, sprinkled with sugar, and prepared for serving. Höşmerim is one of the most commonly prepared desserts in the region. It is traditionally said that the dessert is poured onto a tray, dipped into sugar from the center, and eaten by hand, and that this method of consumption contributes significantly to its distinctive flavor.
